Joy Batch Cookies & Coffee Brings Small-Batch Sweets to Highlands Ranch
Located in Highlands Ranch Town Center, Joy Batch Cookies & Coffee is now open, serving up a delicious variety of small-batch cookies and carefully curated coffee blends.
What began as a small home-based baking business called Quinnie’s Cookies in 2023 quickly gained momentum through local pop-ups, community events, catering, and the support of an enthusiastic local following.
But Joy Batch started long before the storefront. Owner Sarah Carlson grew up in a big family as the fifth of seven children, where baking was simply part of everyday life. The memories of gathering in the kitchen, sharing food, and finding joy in the little things stayed with her through her career and into starting a family of her own.
Inspired by classic desserts, childhood favorites, and nostalgic treats, Carlson has turned familiar flavors into creative cookie combinations. Think Cinnamon Toast Crunch, frosted animal cookies, and dirt and worms, all re-imagined as cookies. The menu also features seasonal specialties, giving customers something new to look forward to throughout the year.
Inside the shop, you’ll also find a selection of unique gifts to browse, along with small-batch coffee that makes it a great spot to catch up with a friend. Just be sure to arrive early! Cookies are baked in limited quantities each day, so favorites may sell out.
