212 Pizza Co. is a family-owned pizzeria in Castle Rock, Colorado, operated by the Crooks family. On any given day, you might see Robin (“Mom”) behind the counter, and if you’re lucky, Grandma, Grandpa, and the kids pitching in during the dinner rush. For the Crooks family, serving the community means sharing the same high-quality food and ingredients they serve at their own table.
One of the restaurant’s standout offerings is its house-made sourdough pizza. Made from a starter maintained in-house, the dough undergoes a 48-hour cold fermentation process that creates a light, crispy crust with rich, developed flavor.
