
CV Proper Kitchen & Bar Brings New Dining Experience to Downtown Castle Rock
Castle Rock has welcomed an exciting new dining destination with the opening of CV Proper Kitchen & Bar by Upland Brewing Company. Combining elevated American cuisine with French bistro influences, handcrafted cocktails, and the historic Champagne Velvet beer, this new restaurant offers a unique dining experience unlike anything else in Douglas County.
Located in a beautifully designed 3,778-square-foot space, CV Proper Kitchen & Bar can accommodate up to 174 guests and was created to be a gathering place where exceptional food, outstanding service, and a welcoming atmosphere come together.
The “CV” in CV Proper Kitchen & Bar stands for Champagne Velvet, an American beer brand that dates back to 1902. Originally brewed by the Terre Haute Brewing Company in Indiana, Champagne Velvet has changed hands over the decades and has been part of the Upland Brewing Company family since 2008.
That rich history is woven throughout the restaurant – from its thoughtfully designed interior to menu items inspired by the iconic beer.

The menu highlights fresh ingredients and artisan-quality dishes with French-inspired influences. Guests can expect everything from shareable appetizers to premium steaks, seafood, and comforting classics with an upscale twist. Some standout menu items include the spinach artichoke dip and the million dollar reuben, which features Champagne Velvet-braised corned beef, Swiss cheese, sauerkraut, Champagne Velvet sauce, marble rye, and brewery fries. The sandwich’s name pays tribute to Champagne Velvet’s famous $1 million insurance policy in 1902, earning it the nickname “the beer with the million-dollar flavor.” View the menu.
The beverage program is just as impressive as the food menu. Champagne Velvet is available on tap alongside a curated selection of craft beers, including rotating local favorites. Cocktail enthusiasts will enjoy signature creations such as The Cigar Box, made of Leopold Bros. 8-Year Cask whiskey, Flor de Caña 7-Year Aged Rum, tobacco bitters, Jamaican bitters, and lemon.

The restaurant’s sophisticated yet inviting interior reflects the Champagne Velvet brand, featuring dramatic midnight blue walls, a striking central bar, vintage-inspired lighting, plush tufted banquettes, and mid-century modern seating.
